This wine just gets better and better. After selling out of the 2018 reserve, this vintage has come just in time. Only three barrels of this beauty were produced. The wine was fermented using 60% whole bunch which creates an elegant savoury finish with red fruit aromas and chalky tannins. Drink now or cellar for 10 years.

Made using the Charmat method, in which the secondary fermentation (the one that makes it bubbly) takes place in a pressurised tank. This is a method used in a lot of the more ‘everyday’ sparkling wines – the best example of which is Prosecco.
